I’ve tried some tough recipes. But one thing I’ve never tackled, is soup. Though I’m a huge soup lover, cooking it always seemed way too time consuming and I didn’t want to bother. That all changed. I saw this fresh corn chowder with bbq shrimp recipe on How Sweet It Is and just had to make it. Knowing B was going to get in a workout after work, I had plenty of time to let this bad boy simmer. I have to admit, I took a few timesaving and budgetary shortcuts - replacing fresh corn with frozen, getting already cooked shrimp and replacing the milk with lactaid since I’d die if I drank that much milk. I also added a few more peppers because, well, I like peppers. The result was a lovely creamy soup with a nice kick from the BBQ shrimp. I paired it with a loaf of foccacia for dipping and it was truly delish. Even better, there was enough leftover for B + I to each take some to work the next day. Like many things, this chowder was even better the second day when the flavors had time to blend together. Definitely recommend. Thanks How Sweet It Is for a great recipe!
