• For some reason this morning I was able to pop right out of bed and head over to the gym to sign up for spinning. Class was great, we did tons of different intervals that had all of us huffing, puffing and sweating. At one point we had the bikes on really high resistance but we had to go really fast. It was tough. The instructor wanted to make sure we had enough resistance on the bike to make it worth it and told us it should feel like we were pulling our feet out of peanut butter. Of course that made me immediately hungry rather than inspired, but the image was there. I’ve always been a peanut butter fan (I made another batch of this peanut treat yesterday) but have expanded my nut butter love in the last two years. One that I really love is almond butter. I read a SELF Magazine article the other day saying that almond butter is actually better for you than peanut butter. Though that may be the case, almond butter will never replace peanut butter in my book. 
Another butter I picked up at TJ’s this weekend was sunflower seed butter. I haven’t had a chance to test it out, but I’m looking forward to it. While catching up on some of my blogs this morning I saw Jenna from Eat Live Run had made an gorgeous batch of sunflower cookies. Once Lent is over and I can eat chocolate again I’ll definitely be making this babies!

This blog initially served as my day-to-day training record for the 2010 New York City Marathon with a little bit about how I have fun in the city. I finished my first marathon in 4:17:48 and had the time of my life. I also raised over $2000 for Camp Casey.
