• My new year’s goal to cook more has been going great. Sunday, when Brian got home from his basketball game we were both excited to try one of the two recipes we had chosen for the week. Unfortunately we were both starving and the two recipes took over 1.5 hours. This is where having staples comes in handy! We were able to put together a pizza using leftover dough and pizza sauce from our pizzas a few weeks ago, cooked and chopped artichoke hearts I had frozen and threw on some cheese we had for an upcoming recipe. The result was tasty, quick and much healthier and cheaper than purchasing a pizza!

  • You may notice that I’ve started adding a few additional posts here about food. I love cooking. The happiness I get from a home-cooked meal can rarely be matched, especially when I can share it with friends. I love finding new recipes so I thought I’d post some of my favorites on here, since many are fairly healthy. Tonight I did a variation of a recipe I’ve been making fairly frequently lately. Peanut Butter Fingers (yes, clearly I’m obsessed with this blog) uses cauliflower to make “dough” for pizza. I’ve been doing the same lately and really liking it. Tonight, rather than the usual margherita pizza I’ve been making using my basil plant, I decided to mix up the basil with garlic and cheese and make a pesto white pizza. It was delicious. I’m not a carb watcher, but I feel better when I eat fewer carbs in the evening than in the morning. This dough recipe allows me to enjoy pizza without the heavy dough. It does include a lot of cheese, but I’ve never been one to pass up cheese! I also felt I deserved a nice glass of Malbec (my favorite red) and enjoyed it out of an adorable glass R’s mum gave me. So cute.
